The Ancho or Poblano pepper (Capsicum annuum) is a mild to medium-heat chili pepper native to Mexico, widely appreciated for its versatility and rich flavor. When fresh, it is called a Poblano and features a large, dark green, heart-shaped pod with thick flesh, commonly used for roasting, stuffing (as in chile rellenos), or grilling. When dried, it becomes known as an Ancho, taking on a deep reddish-brown color and a sweet, smoky flavor ideal for sauces, stews, and mole. Typically harvested in late summer, the pepper has a Scoville rating of 1,000?2,000 units, making it mild compared to other chili varieties. Its complex flavor and dual culinary forms make it a staple in Mexican cuisine
