They are frost-hardy and can tolerate cool temperatures 2 . Days to Maturity: Baby greens can be harvested in as little as 20-40 days after planting, depending on the desired leaf size 2 . Soil Requirements: Arugula prefers well-drained soil with a pH between 6.0 and 7.0. It thrives in full sun to partial shade 2 .
